Vegetable Oats Khichdi

Ingredients (serves 2)

• Oats 1 cup
• Moong dal (soaked for atleast half an hour) 1 cup
• Onion finely chopped 1
• Tomato finely chopped 1
• Green chilli slit 2
• Ginger 1 inch finely chopped or grated
• Mixed vegetables (carrot, beans, peas) ½ cup
• Oil or ghee 1 tablespoon
• Cumin seeds ½ teaspoon
• Asafoetida ¼teaspoon
• Salt as required
• Red chilli powder 1 teaspoon
• Turmeric powder 1 teaspoon
• Water 3 cups
• Lastely juice of half lime
• Finely chopped Corriander for garnishing


Method

• To a pressure cooker add 1 tablespoon of oil or ghee.
• Once it heats up add Cumin seeds, Asafoetida, ginger, green chilli and sauté well until you get the aroma.
• Now add finely chopped onion and fry until it cooks and add Turmeric powder, red chilli powder and salt.
• Add in the finely tomatoes and sauté them well for about 4 to 5 minutes and later add all the mixed vegetables and cook for 2 min.
• Put in the soaked moong dal and one cup oats sauté and add 3 cups water, close the lid and pressure cook for 3 whistles.
• Once done, adjust the consistency as per your need and add juice of half a lime and garnish with Corriander leaves.
• Your very healthy, nutritious and tasty oats meal is done!
