Beetroot onion Uthappam (Indian pancake)

We always need to find ways to include vegetables in everything we prepare. Beetroots are very healthy and must be eaten as often as possible.
Including Beetroot in my dosa recipe to make it more interesting. Please find the recipe below.

Ingredients

• Dosa batter enough for 2 Uthappam (don’t make it too watery)
• Onion 1 finely chopped
• Green chilli 1 finely chopped
• Corriander leaves 3 table spoons finely chopped
• Beetroot finely grated 3 to 4 table spoons
• Oil as needed
• Salt a pinch
• Dosa pan

Method

• Heat a dosa pan and add few drops of oil and spread it evenly using a dry tissue.
• Using a spoon place around 2 tablespoons of grated Beetroot on the pan.
• Keep the flame low and sprinkle a pinch of salt on the beet along with few drops of oil. Let this sit for about a minute.
• Mix the dosa batter well using a ladle and pour the batter around the Beetroot and over it inorder to cover the beetroot.
• Keep the flame in medium-low and top it with onion, green chilli, Corriander leaves.
• Add oil in the corners of the dosa and cover and cook for 2 minutes.
• Flip the dosa and cook again.
• Serve hot with onion tomato chutney.
