Veg Green Pulav

I learnt this recipe from my very good friend years back and its not just my favourite but a family favourite recipe. I never stopped preparing it ever since she taught me. Do try out this tasty dish, good for a relaxed weekend lunch with family. Try it out & drop your comments below.


Ingredients
• Rice 🍚 (Sona masoori or Basmathi Rice) 2 cups- wash and soak for 20min
• Cumin seeds ½tsp.
• Oil 1 Tbsp.
• Ghee half Tbsp.
• Coconut milk 1 cup
• Water 1 ½ to 2 cups
• Carrot 1 finely chopped
• French Beans cut 1 Inch
• Green peas 1 cup
• Capsicum 1 big finely chopped
• Onion 2 finely chopped
• Green chilli 🌶 5
• Ginger 1 Inch
• Garlic cloves 3
• Fresh Corriander leaves 🍃 one big bunch
• Cardamom 3 to 4
• Cinnamon stick 1 Inch
• Cloves 2
• Bay leaf 1
• Salt 🧂
Method
• Firstly, grind the Green chilli, Corriander leaves, ginger, garlic, cinnamon stick, cloves, Cardamom & bay leaf with little to no water to a fine paste and keep aside.
• In a pressure cooker, add oil and ghee and add Cumin seeds to it.
• Once it splutters, add the chopped onion and sauté until its turns translucent.
• Now include all the chopped vegetables- carrots 🥕, green peas, capsicum & French beans and sauté for another 2 to 3 minutes.
• Now add the ground Corriander masala paste along with salt as required and cook for about 4 to 5 minutes.
• Add 1 cup coconut milk 🥥 and 1 ½ to 2 cups water let it boil.
• Now add the washed & soaked Rice to the pressure cooker. Ensure to remove all the excess water from the rice before mixing it with the remaining ingredients in the pressure cooker.
• Pressure cook for 2 whistles, once released keep it open for 5 min before mixing. Fluff it up with a spoon without breaking.
• Serve hot with cucumber raita.
